Curried Lentil Loaf – guest recipe!

When developing Reasonably Vegan, we have had lots of support from our friends and family, so much so that we have encouraged them to create their own vegan recipes to share with us!

This is our first (of hopefully many) guest recipes from the lovely Cheryl! We hope you enjoy the Curried Lentil Loaf as much as we do!

Ingredients:

  • 750g lentils
  • 2 medium onions
  • 1 teaspoon garlic
  • 1 teaspoon ginger
  • 1 teaspoon curry powder
  • 1/3 cup olive oil
  • 1/2 bread crumbs
  • salt and pepper

Method:

Soak 750g lentils overnight, strain. In a pot, add water and bring to the boil then simmer until lentils are soft, drain.

Chop 2 medium onions finely and add to lentils, add one teaspoon of minced garlic, one teaspoon of minced ginger, one teaspoon of curry powder salt and pepper to taste.

Mix well, add one third a cup of olive oil and half cup of bread crumbs too, the mix should be consistency of play dough.

Line loaf tin with baking paper and press mixture firmly into loaf tin. Bake in oven on low temp (150 C,) for 30 minutes then on medium temp for 15 minutes.

Serve with steamed green vegetables of your choice!
